New Zealand is a great place for holiday tours.  In fact people from the UK generally opt for tours in new Zealand as opposed to centre holidays because there is so much to see and do.  It's a long way to go to sit on a beach, so visitors go to see as much of the country as possible.  It's tempting to stay on one of New Zealand's many lovely sandy beaches and soak up the sun  If you are going to do this, you should allow extra time over and above the that set aside for touring.  The minimum length of a NZ holiday tour should be 4 weeks as this gives enough time to stop at 10 to 12 places of interest and see what it has to offer.  However, if there is nothing to stop you staying longer, go for two months and you will still not be bored.  It's a long way to go so you might as well make the most of it.
There are many companies that specialise in arranging holiday packages to New Zealand, so its often the case that one can be selected from a holiday brochure that fits the bill.  However, if you are adventurous, there are many independent travel agencies that will put together a bespoke tour based on your requirements. It's surprising that it is sometimes cheaper (and much more fun) to devise your own New Zealand tour than to buy a bespoke one.  Further, if you have relatives in New Zealand, a built-in trip to see them on your holiday is easy to arrange.
