New Zealand is a great place for holiday tours. In

However, if you are adventurous, there are many independent travel agencies that will put together a bespoke tour based on your requirements. It's surprising that it is sometimes cheaper (and much more fun) to devise your own New Zealand tour than to buy a bespoke one.
